Tex Mex Meathball Pie
Now i know this doesnt look so glamerous but it is quite good. My mom loved it!
You will need:
1 pillsbury refrigerated pie crust
18 cooked meatballs, whether frozen or homemade i used frozen in this case
1 can of corn
3/4 cup salsa
3/4 cup cheddar chese
1 cup shredded lettuce
sour cream
1: heat oven to 375 degrees. Unroll pie crust on cookie sheet. Place meatballs in center of crust.
2: in small bowl mix corn and 1/2 cup of the salsa. Spoon mixture over meatballs. Fold edge of crust over filling, about 2 inches, ruffle decoratively ( as you can see mine wasnt)
3: bake 35-40 min or until crust is deep golden brown. Sprinkle with cheese, bake 3-5 minutes longer or until cheese is melted.
4: top with lettuce and sour cream. Drizzle with remaining salsa. Serve immediatly!
