Caramel Popcorn


I have been craving caramel popcorn soooo much lately! So finally i got some corn syrup and could make it. Now this caramel popcorn is special to me. It reminds me of my husbands sister that passed away. She loved this popcorn! One night Simon and I went for a sleepover at her house and all she wanted to do was eat pizza and caramel popcorn and then watch chick flicks! We watched Maid in Manhattan and The Wedding Date. That night i will never forget. Then in 2008 she was in the hospital for a long time before she finally passed away. So i made this popcorn and took it up to her. Even in this time of saddness and suffering she always new how to crack jokes and make you smile. She had a big mask on for her oxygen and to eat she had to unsnap it, put food in her mouth and then resnap it. It was an annoying process. So she took HUGE handfuls of the popcorn and shoved it in her mouth, i was just laughing! I miss her dearly.

Anyway now that im done tearing up... sorry if it made you cry Cara.

Now im sure there is nothing so fantastic about this popcorn could just be my story with it that makes it so fantastic for me.

Caramel Popcorn

You will need:
4-6 Quarts popcorn
2 cups brown sugar
1 cup butter
1/2 cup lite corn syrup
1 tsp baking soda
1 tsp vanilla
dash salt

1: Bring brown sugar, butter and corn syrup to a boil.
2: add in baking soda, vanilla and salt until foamy.
3: pour over popped popcorn and mix. (it may seem kind of weird at first but once the caramel cools down it looks normal lol)

Nope this recipe is just plain great!! And because she loved it it just makes it better!! And yes it did choke me up a little cause I miss her tons too!
